Rhubarb Custard Pie

This rhubarb custard pie is super easy to make - it has a par-baked crust and a rhubarb custard filling.

Make your pie crust and crimp as desired.

Line the pie crust with parchment and fill with weights, then par-bake. 

Add the chopped rhubarb to the par-baked crust and arrange.

Make your custard - whisk together all ingredients.

Pour the custard over the rhubarb and leave it to settle.

Blow torch any bubbles or pop with a knife.

Bake the pie until the edges are set and the middle is still slightly jiggly. Leave to cool completely.
