Oaty Ginger Crunch

This easy oaty ginger crunch is a New Zealand classic. A chewy oaty base is topped with a spicy ginger icing. 

Combine dry ingredients then add the wet ingredients and mix to combine. 

Transfer to the prepared pan and smooth out, then bake until golden brown. 

While the base is baking, make the topping. Melt together.

Pour over the hot base and smooth out. 

Top with crystallized ginger pieces. Leave to set at room temperature.

Cut into pieces. Store in an airtight container at room temperature.
