Brown the butter and measure out.
Make a hard caramel and leave to set.
Combine brown butter, egg yolks and sugar until fluffy.
Add dry ingredients and mix to combine.
Break up the caramel and chop chocolate.
Add caramel and chocolate to the mix and mix to combine.
Portion cookies using a cookie scoop.
Add extra chocolate to the tops.
Bake until done then scoot into place.
