Make your puff pastry by making a butter block and locking it into your dough
Lock in the butter and do a series of turns
The dough takes multiple turns and rolling out - take your time!
Roll the dough out and bake between two pans until golden
Trim down the pastry to fit your pan
Make the custard and cook until thick
Top with a second piece of pastry and leave to set
Once set, remove from the pan
Finish the custard square with icing
Cut into slices using a bread knife
