Chelsea Buns (Custard Buns)

These Chelsea buns have a soft dough and a custard and raisin filling.

Start by making pastry cream. Whisk hot milk into yolks and custard powder

Cook until thick then chill down.

Roll out dough into a large rectangle

Spread with the chilled custard

Roll up the dough into a tight log

Cut into slices and arrange in the pan

Leave to rise until puffy

Finish with glaze as desired

I prefer to pipe on then smooth with a spoon
