I gave one of my fave Nz recipes, Tan Square, a wee bit of a refresh for my site this weekend. Tan square has a shortbread base, and you hold back just a wee bit to sprinkle over the condensed milk caramel topping before it goes into the oven. It’s so easy and just so good - I based this recipe off of my Grandma’s so it has a special spot in my heart. Only made sense to use Nz butter for a Nz recipe, so I used @lewisroadusa unsalted butter throughout to make sure it tasted just like how Grandma made it. When you google banana bread there’s 433,000,000 hits. So I’m sure one more won’t hurt, right? This one has greek yoghurt and a crunchy crunchy sugar topping. Is it the best banana bread ever? Probably not. But I like it so I though I’d share with you, especially seeing as today is apparantely #nationalbananabreadday and for someone that wings 99% of their life, having this ready to go today was a v happy accident. If you need a wee project for the weekend, my espresso chocolate babka would like to be put forward for consideration! This one has rye in the dough but If you don’t have any rye flour you can just use the brioche recipe for the brown butter cinnamon rolls on my site and then the filling for this and it will all work out just fine! Babka freezes super well wrapped tightly in the freezer, which is perfect to have stashed because it also happens to make very epic french toast. Recipe link is in my bio!

Have you roasted fruit before? It’s perfect for out of season fruit or if you’re using frozen fruit. Roasting concentrates the flavour and it’s just a very delicious situation. There’s a new recipe on the blog today - for funfetti snack cake with a raspberry buttercream! This is super easy to make, and the buttercream is just so, so good. I used Valentine’s sprinkles but you can use regular rainbow sprinkles too if you like - in fact there’s a whole section in the recipe all about using sprinkles in cake! Link is in my bio!
